A new, casual pasta joint found its home on King Street in Newtown, Sydney, only a few months ago. Spearheaded by chef Fabio Stefanelli, La Favola tackles fresh, housemade pasta with Australian sensibility. The simple menu gives diners the option to match six pasta shapes to six sauces, plus a few starters, sides, and desserts to complete the meal.

I was sceptical at first. After traversing through Rome last year, where a carbonara is strictly served with spaghetti and no other pasta shapes, my interest was piqued. How does pairing carbonara with a different pasta shape play out? I was wildly wrong to be so cynical. The pick-your-own-pasta adventure at La Favola is quality-driven and full of flavour. I’m especially taken with the paccheri (large loops of pasta), which are the perfect vehicle for broccoli e salsiccia. The creamy sauce with pork sausage, broccoli, garlic, white wine, and basil is irresistible and the pasta perfectly al dente. Of course, a generous sprinkling of parmesan never goes astray.
